Homemade Corned Beef Hash made from Leftovers.

St. Patrick Day Leftovers! I thought I’d give making Homemade Corned Beef Hash. We had a good bit leftover from dinner and I hate to let things go to waste.  Pete loves Corned Beef Hash so I thought I’d give it a go and try to make it from scratch for once.

Here was the main dish!  Everything came out so good.  I think next time I’d like to make the Corned Beef from a recipe I found instead of one that is already prepared and you only have to pop it in the oven.  The Corned Beef was from Costco and I was happy to save the time.

Any salty meat and eggs is going to be good but I wish I had researched a few more recipes before I jumped in with this one.  The fact that I had Rye with it just made it all that much better.  For a first attempt at homemade Corned Beef Hash I will give myself a pat on the back.

To be honest this post is going up a long time after I made this and I can’t even find the recipe I used to make it.  One thing I do remember saying was I should have cut the pieces smaller.  It wasn’t tough but it would have been a better presentation.
